what do rat farts have to do with this post? nothing. it’s just a phrase my best friend uses when she’s having a stupid day. get over it. btw, add this song to your playlist.

pain is beauty…pain is beauty. not really. look at my hand! does that gross you out? good!  that would be the result of 55 hang cleans today. yum. ps: it’s really quite funny how mentally unstable most women are. well, at least i know i am sometimes.  After the marathon, i took a straight week off- like didn’t do sh*t but eat whatever i wanted, and then the following sunday rolled around, and i seriously felt like a morbidly obese, disgusting old lady. like right up there with Precious. (too soon?) anyways, after that- it’s been crossfit 4x a week, still running a few times a week and some strict paleo. if you don’t know what the paleo diet is, you should really read up on it here. moral of the story is, i already feel like a million bucks and it’s only been 2 weeks since i’ve been back in my routine. bread is bad, people! so is dairy! think about it.

 i’ve been cooking/baking paleo for a while thanks to paleomg.com, and now i’ve started to experiment on my own. not sure if that’s a good thing or a bad thing. one time when i was a freshman in college, i tried to make a blended coffee drink and actually just dumped the coffee grains into the blender with milk and ice, hoping the coffee grains would just magically turn into a liquid or something? i don’t know! what a ding-dong! anyways,enjoy.

paleo chicken broccoli alfredo mess.

  • 2 chicken breasts, cut in slices

  • 1 spaghetti squash

  • garlic powder

  • salt n pepper

  • basil

  • 1/2 c. coconut milk in the can, full fat

  • coconut flour

  • 2 c. broccoli

  • ½ yellow onion chopped

  • olive oil

  • 1/8 c. vegetable broth

     

  1. cut your spaghetti squash in half, place the two halves face down on a cookie sheet. bake at 425 degrees for 20-25 minutes.

  2. cut your chicken into tenders, lather up with some olive oil, garlic powder and basil. bake at the time as the spaghetti squash.

  3. cook your broc. I actually just threw mine in the microwave in a bowl w/ water for 4 mintues.

  4. add broccoli, onions, coconut milk, vegetable broth, garlic powder, salt/pepper, basil to sauté pan. just stir that sh*t around for a while. then add some coconut flour to thicken the sauce. i just kept adding it until it was a little thicker. it’s still going to be a little runny.

  5. pull your chicken and spaghetti squash out of the oven. de-thread the spaghetti squash into a bowl.

  6. dump your chicken into your pan with the broccoli mix and let it cook for 2 minutes or so.

  7. grab yo’self a bowl, put some squash in there and dump your chicken mess on top. delish!
