{nom noms & plaid}

things i enjoy today:

1. a mcdonald’s peppermint mocha. honestly, way better than a starbucks peppermint mocha. you know it’s true. come on. and christmas time! it’s the most wonderful time of the year, people!

2. butternut squash & chicken and bacon. yum. see photos below.

3. plaid.

4. the industry i work in. it’s pretty phenomenal  to know that the apparel industry has helped certain areas of the country prosper. seriously amazing. bangladesh…jeesh!

5. 85 # hang cleans. quite enjoyable in a wod, i must say!

things i don’t enjoy today:

1. inspectors

2. going to starbucks for a group of co-workers. some people are too picky. not my cup of tea. no pun intended. ha. ha.

3. drivers in the denver area after a slight snowfall. good god. who are these people?! i think people should get ticketed for being morons. have i said this before? i’m sure i have.

4. smelly feet

5. negative nelly’s.

anyways—here is what i had for dinner last night and it was ahhhhmazing!

butternut squash w. chicken & bacon & stuff.

what you’ll need:

2 8 oz. chicken breasts

5 slices of bacon

some parsley

1/2 cup o. coconut milk (canned)

1 butternut squash

garlic powder, salt n pepper

  1.  pre-heat your oven to 425 degrees and bake your squash for about 30 minutes or more. or until the shell is soft.

  2.  at the same time, put your chicken breasts in the oven as well (seasoned with whatever you want) and cook until they are done. usually takes about 25 minutes for me.

  3. while all of the above is occurring, dice up your bacon and fry it.

  4. once your squash is baked, scrape out and dump this in with your bacon. then add your chicken ( diced up) and add your coconut milk and your parsley and other spices.

  5. stir up until it’s a nice mess.

  6. eat it! or else! you’ll hear the wrath of caley!




SO YUMMY! I even at this for breakfast today!
